Well It’s the beginning of Thanksgiving week, and I’m not ready!
I don’t have a lot to write about today, but I really want a perfect post for the month. So I thought I would just rant a bit about my job today, and for the next few more if you don’t mind!
Our kitchen is very small, and the staff is even smaller. This is normally a good thing for a restaurant… I did say normally! Our menu is too extensive for the size of our kitchen, and staff. I may sound like I am wining on this subject, however, if you will just hear me out I think you will come around to my way of thinking.
For example we have 12 items that have to be deep-fried on the lunch and brunch menus, yet we only have one medium sized deep-fryer! This can cause quite a log jam during a moderate Sunday brunch, and forget it if we get busy! I have tried to convince the powers that be to drop some of the items, instead they seem to want to add more instead. We have over 100 Items on the brunch menu , and only 2 cooks ( me and my partner Artemio ) scheduled to cook all this food. When we are trying to feed 250 plus people that gets a bit tricky, and takes us to the edge of sanity most Sundays!Like I said the kitchen is tight, and Artemio and I are working side by side for a full 8+ hour shift, with little more than a quick potty break or two. It’s hot and everyone wants everything RIGHT NOW!! Well, we can only go as fast as we can, and let me just say as a team we go pretty damn fast! We work well together, and don’t even have to verbally communicate with each other now. I always know where He is , and he knows the same of me. Without Artemio ( my muffin) I would not make it through a weekend!
