Good-bye November!!!

It’s Sunday and if you have been following you know what that means!

I have to admit thatI haven’t quit smoking again for another week!

Well I am happy to say that even though I still would be considered a smoker by any nonsmoker out there I think most smokers would call me a want-to-be smoker at this point.

Yes I still smoke some everyday, however I don’t smoke more than 8 and normally less than 6 a day now. I still falter at work, I find that the hardest to give up! A smoke break, from the line is a wonderful thing, let me tell you Mr.

The down side is that I have almost become that guy I hate, The one at the party who doesn’t have his own pack, but smokes as much as everyone else! I won’t allow myself to fully go there, so I always have a pack, which means I end up smoking more than I really want to.

The new year will bring many changes I’m sure, so I won’t fret the small things! I just hope 2009 turns out better for me than 2008 did, I need a good year for a change! I’m tired of having shitty ones!

Don’t take this wrong, not the entire year has been bad, It just ended in the crapper! I just wish for once I could end a year without some major SNAFU. Then, I think I could die happy!

Out of sight, out of mind? Or, no news is good news! Are these idioms ture?

I don’t believe these are true statements! I would go so far as to say that they are completely false, most of the time! If I don’t hear from a friend of mine for a while I know something isn’t right! It may just be that they are really busy and down about their life, or it could be more serious, either way something is a miss. I know I tend to retreat when I am going through a rough patch. The last thing I want to do is bring my problems to my friends, I have on the other hand relied to heavily on my lovers in this department, which I think might be my downfall as far as a long-term thing is concerned. Maybe I would be better to spread out the bad news around instead of always dumping on the one person who is closest to me, anyone have any thoughts on this? I have always thought that honesty in a relationship was the only way to go, however I haven’t had any luck keeping a partner for any length of time, so maybe I’m way off the mark here.

I hope everyone enjoyed their Thanksgiving!

I did and I wanted to share some of my favorite moments with you. I went over to my Aunt and Uncles on Wednesday to help her prepare for the big day!

And returned to their house early Thanksgiving day to finish the feast and get ready for the celebration. It was a bit bitter sweet due to the fact that my Uncles mother passed away last week, Ruth was 99 and 1/2 years old when She left us, so She did have a full and wonderful life, but we all miss her and wish she were still here. We  are missing several people due to my other Uncle from Texas is sick, and they have no idea whats wrong, so they didn’t make the trip. It dropped from 35 to 16 people. I may not like large crowds, but I miss it on Thanksgiving! I can’t find the cable I need to download my photos right now! this sucks!!!!! I took some great shots I want to share with you! I will keep looking and get them up soon I hope.

I hope you forgive me, I am very tired… I didn’t get home until midnight, and I had to wake up at 5 am, for work! I may not get the pictures up for a couple more days, I need to rest and recoup! Thanksgiving is great but I’m glad It only happens once a year!

I try to find something to be thankful for every day, but celebrating it is very stressful.

I love you all and really wish I could find that stupid cord!!! I want to share my pictures with you, while there still relevant. I would hate to miss this opportunity! Let me go look, Hopefully I will find it before I post tomorrow!

Happy Thanksgiving America!

Well here we are on this Holiday, eating out turkey, and sharing stories of days gone by. Enjoying ( or not ) the company of our family and friends. eating to much, watching the Dallas Cowboys play, or if you are so lucky… outside playing in the snow! I love this time as I have said often lately, but It really is a magical time. No matter what is wrong in our lives we can just set it aside and enjoy being part of something larger than ourselves. Politics, Religion,  any differences, can be overlooked and joy is found! OK that’s not the world I live in either, but wouldn’t it be nice? My family doesn’t fight as much as we used to, but the odd scuffle does still happen. It just wouldn’t be Thanksgiving without at least a little bloodshed.

Tomorrow I will try to post some shots of my time with the family, I would love to see some of yours as well, if possible!

Tomorrow We give thanks!

As I have touched on most of this month, I try to give thanks every day of my life! I’m not saying I’m some kind of sappy, happy, sort of guy that none of us really like to hang out with. I just think we should always try to find some good in every day. We all know there is a lot less of it going around at the moment.

A large part of my family is in town, and we are going to have a huge feast tomorrow, Even though we just lost a member of our family last week, and the passing of my mom was around this time , We as a family still have their memories, and each other.

I will always love this time of year, even with the sad memories of loss.

I hope I have brightened your day at least once, with this blog, I know writing it has enriched mine!

Tomorrow I will return to give one last Thanksgiving thought, and hopefully I will have some pictures of my celebration for you on Friday!

Waiters… Friend of Foe?

I have a hard time with this question. I do love most of the waiters I have had the opportunity to work with over the years, however I have also wanted to ring their necks, each one! I get it YOUR table or tables are the most important thing in your world at that given moment, But I however , am dealing with 6 of YOU, in that same moment! There is only one me ( cook) ! There are 4 to 6 of YOU ( waiters ), get it now? I have 6 people that have 4 tables each ( at least), all expecting me to stop what I am doing to listen to them describe some woman’s salad in great detail! I don’t have time for this… ring it in correctly, or write it down!! Quit bothering me!!!

I do really get along with the people I work with on a personal level, but when the sh-t is hitting, the fan is always pointing at me, and that makes me an angry and stinky man!!

Luckily, I have learned to take it… like water off a ducks back!

I just hope all the waiters have as well!

The Krause family arrives today, so Thanksgiving is almost here!

Well It’s the beginning of Thanksgiving week, and I’m not ready!

I don’t have a lot to write about today, but I really want a perfect post for the month. So I thought I would just rant a bit about my job today, and for the next few more if you don’t mind!

Our kitchen is very small, and the staff is even smaller. This is normally a good thing for a restaurant… I did say normally! Our menu is too extensive for the size of our kitchen, and staff. I may sound like I am wining on this subject, however, if you will just hear me out I think you will come around to my way of thinking.

For example we have 12 items that have to be deep-fried on the lunch and brunch menus, yet we only have one medium sized deep-fryer! This can cause quite a log jam during a moderate Sunday brunch, and forget it if we get busy! I have tried to convince the powers that be to drop some of the items, instead they seem to want to add more instead. We have over 100 Items on the brunch menu , and only 2 cooks ( me and my partner Artemio ) scheduled to cook all this food. When we are trying to feed 250 plus people that gets a bit tricky, and takes us to the edge of sanity most Sundays!Like I said the kitchen is tight, and Artemio and I are working side by side for a full 8+ hour shift, with little more than a quick potty break or two. It’s hot and everyone wants everything RIGHT NOW!! Well, we can only go as fast as we can, and let me just say as a team we go pretty damn fast! We work well together, and don’t even have to verbally communicate with each other now. I always know where He is , and he knows the same of me. Without Artemio ( my muffin) I would not make it through a weekend!

Well It’s Sunday again! Thay means I have to admit my downfalls… Again!

Yes I am still partaking in the Cancer sticks! I have continued to keep it down to less than 10 a day, however I am above 5,  instead of less! I still refuse to feel guilty about it, even though I know those of you who have supported me through this may find it “a let down”, or “failure”, I see it as a move in the right direction! If I am still cutting back, I don’t care how many cigarettes I smoke in a day, I have been doing it for 24+ years, so any less is good in my book!

It may not be a good excuse… but I have been through a lot this year, and with the holidays starting next week, I don’t even want to stress myself anymore! I will get back on the plan after the family leaves, and the new year begins! I understand how lame it is to make excuses! However, If I am still cutting back, I don’t see it as an excuse, rather a delay of My end result! A move forward without the pain, yet!!!! Let that come with the new year, and all the other major changes I have to make!

2009 Will be a major life changing year for me as it is, so lets make it worth it!

I’m growing my hair, We have a new President, and I’m single again, I have a lot to look forward to!, Let me enjoy my last days with my mistress!

She knows the love affair is over, We just have to have this last fling!

Lets have a drink tonight… because tomorrow we die!!!!

Yesterday was sweet-potato, as a side, today… It’s dessert!

 Sweet-Potato/Pecan pie: My Favorite!!!!!

This is an intense, and labor intensive recipe, but I assure you the end result will be well worth the effort! This is my favorite pie for the holidays, or any occasion for that matter! Hell I eat this for breakfast if I have one made!!!!

This recipe makes only one 8-inch pie, so I normally double it for larger gatherings.

The Dough:

3 tablespoons unsalted butter, softened

2 tablespoons sugar

1/4 teaspoon salt

1/2 of a whole egg, vigorously beaten until frothy ( reserve the other half for the sweet-potato filling )

2 tablespoons cold milk

1 cup all-purpose flour

The Sweet-Potato Filling:

2 to 3 sweet-potatoes ( or enough to yeald 1 cup cooked pulp ), baked

1/4 cup, packed, light brown sugar

2 tablespoons sugar

1/2 an egg, vigorously beaten until frothy ( reserved from above )

1 tablespoon heavy cream

1 tablespoon unsalted butter, softened

1 tablespoonvanilla extract

1/4 teaspoon salt

1/4 teaspoon ground cinnamon

1/8 teaspoon ground allspice

1/8 teaspoon ground nutmeg

Pecan Pie Syrup:

3/4 cup sugar

3/4 cup dark corn syrup

2 small eggs

1 & 1/2tablespoons unsalted butter, melted

2 teaspoons vanilla extract

1 pinch of salt

1 pinch of ground cinnamon

3/4 cup pecan pieces or halves

Chantilly Cream:

2/3 cup heavy cream

1 teaspoon vanilla extract

1 teaspoon brandy

1 teaspoon Grand Marnier

1/4 cup sugar

2 tablespoons sour cream

For the dough:  Place the softened butte, sugar and salt in the bowl of an electric mixer; beat on high speed until the mixture is creamy. Add the 1/2 egg and beat for 30 seconds. Add the milk and beat on high speed 2 minutes. Add the flour and beat on medium speed for 5 seconds, then on high speed just until blended, about 5 seconds more ( overmixing will produce a tough dough). Remove the dough from the bowl and shape into a 5-inch patty about 1/2 an inch thick. Lightly dust with flour and wrap in plastic wrap; refrigerate at least 1 hour, preferably overnight. The dough will last up to a week refrigerated.

On a lightly floured surface roll out the dough to a thickness of 1/8 to 1/4 inch. Very lightly flour the top of the dough and fold it into quarters. Carefully place the dough in a greased and floured 8-inch round CAKE pan ( 1 & 1/2 inch deep ) so that the the corner of the folded dough is in the center of the pan. Unfold the dough and arrange it to fit the sides and bottom of the pan; press firmly in place. Trim the edges. Refrigerate for 15 minutes.

For the sweet-potato filling: Combine all the ingredients in a mixing bowl. Beat on medium speed of electric mixer until the batter is smooth, about 2 to 3 minutes. Do not over beat! Set aside

For the pecan pie syrup: Combine all the ingredients except the pecans in a mixing bowl. Mix thoroughly on slow seed of electric mixer until the syrup is opaque, about 1 minute; stir in the pecans and set aside.

To assemble: Spoon the sweet-potato filling evenly into the doug-lined cake pan. Pour the pecan syrup on top. Bake in a 325 degree oven untila knife inserted in the center comes out clean, about 1 & 3/4 hours. Cool and serve with the Chantilly Cream. Store the pie at room temperature for the first 24 hours, then refrigerate, If there is any left!

To make the Chantilly Cream: Refrigerate a medium-size bowl and beaters until very cold. Combine cream, vanilla, brandy and Grand Marnier in the bowl and beat with electric mixer on medium speed 1 minute. Add the sugar and sour cream and beat on medium just until soft peaks form, about 3 minutes. Do Not Over Beat! ( Over beating will make the cream grainy, which is the first step leading to butter. Once grainy you can’t return it to its former consistency, but if this happens, enjoy it on toast!) I have screwed this up on purpose a few times!HAHAHA

Hows my little sweet-potato?

This is another one of those holiday staples, that I feel are made out of tradition, rather than actual enjoyment! I will admit when I was a young boy I loved the overly-sweet side dish with the roasted marshmallows on top. As I grew up though, and my love for all things high in sugar waned, I found the thought of that gooey, sweet, sticky mess very unappealing. Don’t read into this, that I no longer like the vegetable, Just the traditional side dish! I feel the Yam, or sweet-potato, ( and yes there is a difference ) is sweet enough without all the added sugar.

Yams: are much bigger, and milder in flavor.

Sweet-potatoes: are more the size of a standard potato, and sweeter, as the name implies.

They are both Tubers, and with minor adjustments, can be interchanged in most recipes,  although I really don’t recommend it. Both are readily available at your local supermarket.Insert Fun food fact here:

A note about cooking your sweet-potatoes… during the early stages of the cooking process enzymes break down the starch into its glucose units, so remember one simple rule of thumb, the less starch you have, the less liquid you need! I wouldn’t advise boiling your sweet-potatoes, instead roast, or saute them. This will keep you from having a soupy mess! You can always add more liquid, but it is hard to get out once it’s in. 

Another bit of advice: If you want to make a sweet-potato puree, start by making regular mashed potatoes, only before you add your cream and butter, add your sweet-potato puree, this will give you the starch you need to ensure the body ( or texture ) you want, and it make it easier to control.

So I say… Leave the marshmallows for the campfire, and smores, and serve your sweet-potatoes with less sweet and more savory! I thank you will enjoy them more, I know I do!

P.S. Remember to give thanks for everything in your life. My Uncles mother just passed away on Tuesday,  She had a long and very happy time on this earth, so even though She will be missed, I am thankful that I knew her, and that she has moved on, after such a beautiful life.
