Now, lets tackle that Amradillo!

The Armadillo, is a very elusive animal. You don’t see them very often in the wild. When you do they are very quick to retreat, and hide. Plus they are armed with the most interesting defense mechanism you have ever seen! They are able to roll themselves into a ball that is virtually impenetrable. They have an exoskeleton that is as hard as stone! you can’t get in without a huge effort, or a bullet! Once in… the meat is GRAND, If you are a true southerner like me! In this day and age, it may not be a bad idea to utilize our basic hunting and gathering skills. We may need them to survive this economic crisis We are in now! Here is a recipe for:

baked Armadillo:

Stuff a dressed armadillo with a mixture of chopped potatoes, cabbage, carrots, apple slices, garlic, butter, salt, pepper,and oregano. Bake at 350 degrees F. basting liberally with melted butter and drippings every 20 to 30 minutes, till cooked through(about two hours). It is served in the shell!

Now this may seem gross! But if you look at it as “The lobster of the land” you may have a better view! I’m not saying that Armadillo taste’s like lobster, just the preparation is similar! And cheaper! I’m just saying… save your money, or start hunting!
